Century egg or pidan also known as preserved egg, hundred-year egg, thousand-year egg etc. It is a Chinese cuisine ingredient made by preserving duck, chicken or quaileggs in a mixture of clay, ash, salt, quicklime.
Century eggs take about 4-5 weeks to make, a few minutes to work up the courage to open, and a few seconds to eat. After curing the yolk of the egg turns a dark green and has a creamy consistency, while the white turns amber and is gelatinous.
The most common is to eat porridge with preserved egg or Century eggs added to the tofu.
